Product Description
Transglutaminase (TG enzyme) is a solid preparation refined and extracted from the high-quality strain Streptomyces mobaraensis via liquid fermentation and culture. As a transferase that catalyzes acyl transfer reactions, this product can induce covalent cross-linking within and between protein molecules, thereby modifying the functional properties of proteins. Transglutaminase (TG enzyme) offers important application value in the food industry.
Working Principle
Transglutaminase (TG enzyme) can catalyze the acyl transfer reaction in which glutamine residues in peptide chains are converted into γ-carboxamide groups. In particular, it forms ε-(γ-Gln)-Lys cross-links within and between protein molecules with the ε-amino group of lysine residues.
Depending on the acyl acceptor, the catalytic reactions of Transglutaminase (TG enzyme) can be divided into three types:
1. Cross-linking reaction: When the acyl acceptor is the ε-amino group of lysine residues, the ε-(γ-Gln)-Lys covalent bonds formed by Glutamine Transaminase catalysis lead to intra- or inter-molecular cross-linking of proteins, forming a network structure.
2. Conjugation reaction: When the acyl acceptor is a primary amine, the enzyme catalyzes the formation of ε-(γ-Gln)-Lys covalent bonds, conjugating free primary amines to proteins.
3. Deamidation: In the absence of primary amines, with water as the acyl acceptor, the enzyme catalyzes the deamidation of γ-carboxamide groups of Gln residues in proteins to generate glutamic acid residues.

Usage Instructions

Precautions
Enzymes are protein-based substances. For sensitive individuals, inhalation of enzyme powder or droplets may case allergic reactions. Prolonged exposure may irritate the skin, eyes and mucous membranes. It is recommended to wear a face mask during operation. If the product accidentally splashes onto the skin or eyes, rinse immediately with clean water.
